Salmon with Arugula and Tomato Sauce

Ingredients:

  1. 1 pounds - plum tomatoes, seeded and chopped
  2. 1/2 cups - olive oil
  3. 3/4 cups - lightly packed arugula, basil or Italian parsley
  4. 1 - shallot, choppped
  5. 1 1/2 tablespoons - fresh lemon juice
  6. 4 - 6 oz salmon fillets
  7. 1 tablespoons - drained capers

Directions:

Combine first 6 ingredients in a medium bowl. Season with salt and pepper. Preheat broiler or grill. Broil without turning until just cooked through. Transfer salmon to plate. Spoon tomato mixture over. Garnish with lemon wedges.
