Salmon Salad

Ingredients:

  1. 2 cups - salmon cooked, flaked
  2. 2 - hard-boiled eggs crushed
  3. 1 - red or green pepper diced
  4. 1 whole - cucumber peeled, diced
  5. 1/2 cups - onions chopped
  6. 4 1/2 tablespoons - mayonnaise
  7. 1/4 teaspoons - cayenne pepper optional
  8. - salt and pepper
  9. 1/2 - lemon juiced

Directions:

In large bowl, gently stir together salmon and eggs. In another bowl, combine bell pepper, cucumber, onion, and mayonnaise. Add seasonings and stir to combine. Pour mixture over salmon, add lemon juice, and toss lightly to combine. Serve over lettuce or as a sandwich.
