Salmon & Quinoa Cakes

Ingredients:

  1. 1 1/2 pounds - uncooked salmon
  2. 3 whole - green onions chopped
  3. 1 cups - cilantro or more
  4. 1 teaspoons - lemon zest
  5. 1 cups - cooked quiona
  6. 3 teaspoons - old bay seasoning
  7. 3 tablespoons - Vegtebale oil (or canola or...) for cooking

Directions:

1. into a food processor, add the green onion, cilantro, lemon zest and old bay seasoning
2. blend together
3. add the quinoa and salmon (cut the salmon into smaller bits)
4. blend until pate consistency
5. Heat a fry pan with oil
6. scoop out 1/4 cup of salon/quinoa mixture and form into patties.
7. into the pan with hot oil
8. cook 3 min on each side
