Salmon Mouse with Cucumber Sauce

Ingredients:

  1. 1 packages - 8 oz cream cheese softened
  2. 1 cups - mayonnaise
  3. 1 tablespoons - lemon juice
  4. 1 tablespoons - cognac
  5. 3 tablespoons - finely chopped white onion
  6. 1/2 teaspoons - Tabasco sauce +1/2 tsp more to taste
  7. 2 teaspoons - capers rinsed and chopped
  8. 2 cans - 15.5 oz red salmon
  9. 1/2 cups - cold water
  10. 2 envelopes - unflavored gelatin
  11. 1/2 cups - boiling water
  12. 4 - cucumbers
  13. 1 cups - sour cream
  14. 1/2 teaspoons - salt
  15. 1 tablespoons - Dijon mustard
  16. 2 tablespoons - fresh dill
  17. 1 1/3 tablespoons - white vinegar (1 Tbsp + 1 tsp)

  26. 1/2 cups - cold water
  27. 2 envelopes - unflavored gelatin
  28. 1/2 cups - boiling water
  29. 4 - cucumbers
  30. 1 cups - sour cream
  31. 1/2 teaspoons - salt
  32. 1 tablespoons - Dijon mustard
  33. 2 tablespoons - fresh dill
  34. 1 1/3 tablespoons - white vinegar (1 Tbsp + 1 tsp)

Directions:

Mouse
1, in a bowl, pour cod water on top of gelatin and let bloom.
2. Whip cream cheese with hand mixer.
3. Add mayo, lemon juice, Cognac, onion, Tabasco sauce and capers.
4. Add boiling water to the gelatin and stir to dissolve it.
5. Add to above mixture.
6. Spray 6 cup mold with oil and pour mouse into the mold. Cover with plastic wrap and refrigerate until set.
7. When unmolded, garnish with slices of cucumber and lemon and serve with cucumber sauce.

Cucumber Sauce
1. Peel cucumbers, scoop out seeds. Shred cucumbers and salt lightly. Let stand for 15 minutes. Squeeze out all excess juice.
2. Mix cucumbers with rest of ingredients until blended.
