Ingredients:
- 1 1/2 pounds - Salmon filet
- - Olive oil
- - Garlic
- 3 sprigs - Rosemary
- - Dill
- - Green pepper
- - Red pepper
- - Apple or pear optional
- - Brown sugar
- - Cumin
- - Onion
Directions:
1. Take a large piece of heavy duty foil that is twice as long as the salmon filet. Fold foil in half and fold up edges to make a foil basket or "boat".
2. Clean salmon and de-bone. Set aside.
3. Drizzle olive oil on bottom of boat then place rough chopped garlic and 3 sprigs of rosemary in boat, spacing them out along the bottom. Slice onion (1/2) in thin rings and also slice green and red pepper in thin rings. Arrange on top of herbs. Place thinly sliced apples on top of peppers followed by 1-2 tablespoons of brown sugar. Sprinkle cumin to desired amount of heat then drizzle more olive oil or a couple pats of butter.
4. Take salmon filet and place it on top of herbs and veggies. Lightly drizzle olive oil on fish and smooth over entire filet. Sprinkle dill weed and fresh ground pepper on top to taste.
5. Place boat on grill. Depending on thickness, cooking time will vary. Start with 15 minutes as guide and cook to desired pink-ness.
6. Remove from grill and place fish aside to remove skin. Scoop out veggies and apples onto side dish to serve as accompaniment. Toss foil in garbage.
