Salami Corn Quiche

Ingredients:

  1. - 9-inch unbaked pie shell
  2. 1 - egg white slightly beaten
  3. 2 cups - grated Swiss cheese
  4. 4 - eggs
  5. 1 cups - half-and-half OR light cream
  6. 1/8 teaspoons - nutmeg
  7. - dash of pepper
  8. 2 tablespoons - butter or margarine
  9. 1 cups - chopped onion
  10. 1 cans - 8 oz. cream style corn
  11. 1/8 pounds - Italian salami cut into 2-inch long strips, 1/4-inch wide
  12. - halved pitted ripe olives for garnish

Directions:

Brush inside of pie shell with egg white; refrigerate. Preheat oven to 375 degrees F.

In a medium bowl, with wire whisk, beat together eggs, half-and-half, nutmeg and pepper just until combined.

Saute onion until golden in butter or margarine (about 5 minutes). Remove from heat. Add corn and salami.

Sprinkle cheese over bottom of pie shell. Spoon corn mixture over grated cheese; pour egg mixture over top.

Garnish with halved pitted ripe olives. Bake 40 minutes or just until quiche is puffy and golden.
