Ingredients:
- - zucchini
- - eggplant
- - yellow squash
- - red bell pepper
- - olive or canola oil
- - salt and pepper
- - chopped thyme
- - seedless watermelon
- - sunburst tomatoes
- - fresh mint
- - olive or canola oil
- - salt and pepper
- - crumbled feta for topping
- - baguette cubes
- - cherry tomatoes
- - pitted kalamata olives
- - red onion
- - olive or canola oil
- - salt and pepper
- - beet
- - orange
- - fennel
- - avocado
- - lime juice
- - olive or canola oil
- - salt and pepper
Directions:
Thread diced pieces of chosen kabob variety onto skewers. Brush with oil and season with salt and pepper and any other desired seasoning.
Grill kabobs over medium heat, turning often until vegetables are slightly charred (and for panzanella kabobs make sure bread is toasted well).
For watermelon kabobs, top with crumbled feta before serving.
