Salad Kabobs

Ingredients:

  1. - zucchini
  2. - eggplant
  3. - yellow squash
  4. - red bell pepper
  5. - olive or canola oil
  6. - salt and pepper
  7. - chopped thyme
  8. - seedless watermelon
  9. - sunburst tomatoes
  10. - fresh mint
  11. - olive or canola oil
  12. - salt and pepper
  13. - crumbled feta for topping
  14. - baguette cubes
  15. - cherry tomatoes
  16. - pitted kalamata olives
  17. - red onion
  18. - olive or canola oil
  19. - salt and pepper
  20. - beet
  21. - orange
  22. - fennel
  23. - avocado
  24. - lime juice
  25. - olive or canola oil
  26. - salt and pepper

Directions:

Thread diced pieces of chosen kabob variety onto skewers. Brush with oil and season with salt and pepper and any other desired seasoning.

Grill kabobs over medium heat, turning often until vegetables are slightly charred (and for panzanella kabobs make sure bread is toasted well).

For watermelon kabobs, top with crumbled feta before serving.
