Rye Rolls

Ingredients:

  1. 1 ounces - yeast softened in 1/2 cup warm water
  2. 1 cups - scalded milk
  3. 1/2 cups - hot water
  4. 1/4 cups - shortening
  5. 1 tablespoons - salt
  6. 1/2 cups - dark molasses
  7. 1 teaspoons - grated orange rind
  8. 4 cups - rye flour
  9. 2 cups - white flour
  10. - egg whites for brushing tops
  11. - salt and caraway seeds for sprinkling on top

Directions:

Mix milk, hot water, shortening, salt, molasses and orange rind together. Add rye flour and mix well.

Add yeast (with water), rest of flour and mix well.

Put into greased bowl. Let rise. Punch down. Let rise again.

Form into ovals. Snip 3 cuts on top. Brush with egg whites. Sprinkle salt and caraway seeds on top. Let rise.

Bake at 375 degrees F for 15 minutes.
