Rotisserie BBQ Chicken Salad

Ingredients:

  1. 1/4 cups - mayonnaise
  2. 2 tablespoons - apple cider vinegar
  3. 1/4 teaspoons - kosher salt
  4. 3/4 teaspoons - freshly ground black pepper
  5. 2 - hearts romaine lettuce, chopped (6 cups)
  6. 2 - tomatoes chopped
  7. 1 cups - crushed tortilla chips
  8. 1/2 - English cucumber, chopped
  9. 1/2 - small red onion, thinly sliced
  10. 2 cups - shredded rotisserie chicken
  11. 1/4 cups - BBQ sauce
  12. 1 - avacado, chopped

Directions:

Whisk mayonnaise, vinegar, salt, and pepper in a small bowl. Toss lettuce with half the dressing in a large bowl.

Place lettuce on a platter and top with tomatoes, tortilla chips, cucumber, and onion.

Toss chicken with BBQ sauce in a separate bowl; add to platter. Top salad with avocado. Serve remaining dressing on the side.
