Ingredients:
- 1 teaspoons - Avocado oil
- 1 - onion chopped
- 2 stalks - celery diced
- 6 - cloves garlic sliced thinly
- 1 tablespoons - rosemary leaves fresh, chopped
- 6 cups - vegetable stock
- 1 - Bay Leaf
- 2 cups - Cooked Great Northern Beans
- 2 cups - Kale leaves chopped
- 1 - Lemon, juiced
- - Salt and Black Pepper to taste
- - Red Pepper Flakes optional
Directions:
Heat oil in a medium saucepan over medium-high heat. Add onions, celery, garlic, and rosemary. Cook, stirring frequently, until onions and garlic are softened but not browned, about 4 minutes. Add broth, bay leaves and beans. Bring to a boil, reduce to a low simmer and cook for 10 minutes. Add kale and continue cooking until completely wilted. Season to taste with salt and pepper. Stir in lemon juice and sprinkle with red pepper flakes if you like spicier food. Locate and remove Bay Leaf before serving.
