Roasted Veggies with Bacon Jam

Ingredients:

  1. 2 pounds - Fresh green beans or Brussel sprouts
  2. 1/4 cups - Fresh minced shallots
  3. 2 tablespoons - Extra virgin olive oil
  4. 1 jars - Better Than Good Bacon Jam Available at HEB

Directions:

1. Heat oven to 400.
2. For beans, trim ends; cut beans in half or leave whole. For Sprouts, trim ends and remove any loose outer leaves; cut sprouts in half.
3. Cut ends from shallots and remove outer skin. Mince finely for green beans; chop shallots more coarsely for Brussels sprouts. Toss beans or sprouts w/ shallots and oil in a large mixing bowl.
4. Transfer to a large baking sheet and spread mixture out evenly. Roast in oven, 8 to 10 min. for green beans or 20 to 25 min. for sprouts.
5. Remove from oven when barely done. Return mixture to mixing bowl, toss w/ bacon jam and serve while hot.
