Cooked salmon separates from its skin easily; hold down skin with a spatula while lifting fillet with another spatula to separate.

Ingredients:
- 4 - salmon fillets (4 to 6 oz. each)
- 1 - small shallot minced
- 1/2 teaspoons - salt
- 1 tablespoons - olive oil
- 1 - large lemon zested and halved
- 3/4 pounds - green beans trimmed
- 1/2 cups - fresh basil leaves chopped
Directions:
Preheat oven to 375 degrees F. Place salmon, skin side down, in a shallow baking pan.
In a small bowl combine shallot, lemon zest, and salt; stir in olive oil. Spoon about 2 tablespoons of this mixture over top of each salmon fillet; set remaining mixture aside.
Roast salmon for 10 to 15 minutes or until fish flakes when tested with a fork.
Meanwhile, steam green beans for 5 minutes or until crisp-tender. Transfer to a platter, and toss with reserved shallot mixture and half of basil. Season to taste with salt.
Remove skin from salmon pieces and place fillets on top of green beans. Squeeze lemon over fish, and top with remaining basil leaves.
