Ingredients:
- 1/3 cups - Apple cider
- 1 tablespoons - Apple cider vinegar
- 1/4 cups - Brown sugar
- 3 whole - Parsnips Peeled & cut in 2-in. pieces
- 1 whole - Onion Chopped
- 3 whole - Carrots Peeled & cut in 2-in pieces
- 2 whole - Red potatoes Quartered
- 1 whole - Turnip Peeled & cut in 2-in pieces
- 1 whole - Sweet potato Peeled & cut in 2-in pieces
- 4 cloves - Garlic Peeled
- 3 tablespoons - Olive oil
- 1/4 teaspoons - Ground cinnamon
- 1/4 teaspoons - Salt
- 1/4 teaspoons - Pepper
Directions:
1. Preheat oven to 400. Line a large sheet pan with foil and set aside.
2. In a microwave safe bowl combine apple cider, apple cider vinegar and brown sugar. Microwave on High 1 minute. Set aside.
3. Toss veggies and garlic in a large bowl with olive oil, cinnamon, salt and pepper. Pour onto prepared sheet pan and roast 30 min.
4. Remove from oven and drizzle with apple cider glaze. Bake an additional 15 min. or until golden brown and fork tender.
