Roasted Potatoes with Garlic

Ingredients:

  1. 4 1/2 pounds - medium red and all-purpose potatoes unpeeled and cut into quarters
  2. 2 - medium red onions each cut into 6 wedges
  3. 1/4 cups - olive oil
  4. 1 1/4 teaspoons - salt
  5. 1 teaspoons - dried thyme
  6. 1/2 teaspoons - coarsely ground black pepper
  7. 2 cloves - garlic minced

Directions:

Preheat oven to 425 degrees F. In a large roasting pan (about 17 inches by 11-1/2 inches), toss potatoes with remaining ingredients.

Roast 1 hour, turning occasionally with metal spatula, until golden and fork-tender.

Serve roasted potatoes warm or at room temperature.
