Roasted Eggplant Dip

Ingredients:

  1. 1 - large eggplant
  2. 2 tablespoons - fat-free cottage cheese heaping tablespoons
  3. 1 teaspoons - ground cumin
  4. 1 teaspoons - ground coriander
  5. - fresh cilantro to garnish

Directions:

1. Preheat the oven to 400° F. Cut the top stalk off the eggplant and then slice it in half lengthways.

2. Place skin side down on a baking tray and bake for 30-40 minutes until soft; then leave to cool.

3. Once cool, scoop out the flesh and blitz in a blender until smooth; add the spices and cottage cheese and blend until well mixed.
