Ingredients:
- 5 ears - fresh corn (or 1/2 pound frozen corn)
- 1 - red pepper (or 1/2 cup frozen pepper)
- 1 - green pepper (or 1/2 cup frozen peppers)
- 1 teaspoons - cumin
- 1 teaspoons - salt
- 1 tablespoons - lime juice
Directions:
Preheat oven to 450 degrees F.
Remove corn from the ear (option to roast the corn on the ears then remove).
Dice peppers.
Roast corn and peppers in oven for 15-20 minutes.
Place all ingredients in large bowl and mix together.
*Best if let to sit for 1 hour before serving.
