Ingredients:
- 1 pounds - Asparagus
- 1/2 tablespoons - Olive oil
- - Sea salt
- - Fresh ground black pepper
- 1 cups - Blueberries
- 1/2 cups - Extra Virgin Olive Oil
- 3 tablespoons - Blueberry balsamic
- 1 - Small Shallot finely chopped
- 1 teaspoons - Dijon mustard
- 1/2 teaspoons - Sea Salt
- dashes - White Pepper
Directions:
Heat oven to 400°. Toss asparagus with olive oil and lay flat on a cookie sheet. Sprinkle with salt and pepper. Roast for 10-15 minutes. Asparagus tips should be slightly browned.
Place olive oil, balsamic, shallot and mustard in a small container with a tight lid. Shake until well blended. Season to taste.
Place asparagus on a platter. Sprinkle blueberries over asparagus, drizzle with blueberry vinaigrette and lightly toss to coat.
