Roasted Asparagus

Ingredients:

  1. 2 pounds - fresh asparagus
  2. - olive oil
  3. - kosher salt and freshly ground black pepper

Directions:

Preheat the oven to 400 degrees F.

Slice off the tough, thick ends of the asparagus.

Place the asparagus on a baking sheet and drizzle with a little olive oil; then toss until the asparagus is completely coated.

Spread the asparagus in a single layer and sprinkle liberally with salt and pepper.

Roast in oven for 25 minutes or until tender, but still slightly crisp.
