Ingredients:
- 4 teaspoons - salt
- 1 teaspoons - paprika
- 1 teaspoons - onion powder
- 1 teaspoons - dried thyme
- 1 teaspoons - white pepper
- 1/2 teaspoons - cayenne pepper
- 1/2 teaspoons - garlic powder
- 2 - onions OR lemons quartered or sliced
- 2 whole - chickens - about 4 pounds each
Directions:
Mix the first 7 ingredients together.
Remove any giblets, rinse the chickens, and pat them dry. Sprinkle the outside and the cavities with the spice mixture. Place either onions or lemons in the cavities and place the chickens in zipper type plastic bags. Refrigerate overnight.
Preheat the oven to 250 degrees F. Remove chickens from the plastic bags and place them in a baking dish. Bake the chickens, uncovered, for 5 hours or until the internal temperature reaches 180 degrees F. Several times during baking, spoon pan drippings over chicken.
Suggestion: Roast more chickens than you will need for one meal. Leftover chicken can be pulled from the bone and used for casseroles, enchiladas, salads, or any recipe that calls for cooked chicken.
