Roast Pork with Fennel

Ingredients:

  1. - Pork
  2. 4 cloves - Garlic sliced
  3. 1 tablespoons - Parsley chopped
  4. 1 teaspoons - Thyme
  5. 1 - Bay Leaf crushed
  6. 1/4 cups - Olive Oil
  7. 1 1/2 cups - Dry White Wine
  8. 1 tablespoons - Fennel Seeds
  9. - Salt
  10. - Pepper

Directions:

Put garlic slivers in rolls of roast and slits you make all around. Salt and pepper outside of roast. Put in a baking dish and add parsley, bay leave and thyme. Rub with olive oil. Pour wine over all. Cover and refrigerate 12 hours, turning occasionally.

Bake in 325 degree oven for 40 minutes per pound (3 hours).

Skim fat and add enough water to juices to make 3/4 cup. Reduce over high heat and pour over sliced roast.
