Ingredients:
- 2 pounds - pork tenderloin
- 3 tablespoons - low-sodium soy sauce
- 2 tablespoons - lime juice
- 2 tablespoons - orange juice
- 2 tablespoons - vegetable oil
- 2 tablespoons - ginger root
- 1/2 teaspoons - dry mustard
- 1 cloves - garlic
- 2 tablespoons - butter
- 6 slices - fresh pineapple
Directions:
Prep: Trim excess fat from tenderloin. After working with pork, wash hands, knives and cutting board with hot soapy water before working with vegetables.
Combine soy sauce, juices and spices in a small saucepan and stir well. Heat glaze until hot.
Place tenderloins in a large shallow dish. Preheat oven to 375 degrees F; roast for 40 to 45 minutes or until meat thermometer registers 160 degrees F. Baste tenderloins often while cooking with heated glaze.
Meanwhile prepare pineapple slices by melting butter in a large skillet; add pineapple slices and saute until golden brown.
To serve, slice tenderloin, drizzle glaze over pork and garnish with warm pineapple slices.
