This made a delicious meal served up with some frozen peas heated up with sea salt, pepper and organic unsalted butter; we also sliced a fresh tomato to eat with it and had iced tea. I like to use a bone-in chuck roast for this, then use the bone the next time I make beef stew (when I add a little Bragg's Apple Cider Vinegar to the water to help pull the minerals out of the bone into the broth for a boost in nutrition). I bought the roast from Texas Healthline Meats (www.texashealthlinemeats.com) at the Grapevine Farmers' Market.

Ingredients:
- 1 - organic grass-fed roast
- 5 cloves - garlic peeled, sliced thinly
- 1/2 - onion sliced thin
- - sea salt and pepper
Directions:
Heat stainless steel dutch oven over medium heat until hot (when you hold your hand a few inches from the bottom of the pan, if it's hot enough, you'll pull your hand away quickly).
While it's heating, cut slits in the roast and press slivered garlic into the meat.
Put the meat in the pan to let it brown on one side for a few minutes; then flip it and brown the other side for a few minutes. Now turn the heat down to the lowest setting.
Place the sliced onion on top of the beef and add some sea salt and pepper. Put the lid on, and let it cook for about 3 hours.
