Rice Dressing

Ingredients:

  1. 1 tablespoons - oil OR Pam cooking spray
  2. 1 pounds - lean ground beef
  3. 1 cups - boiled chopped chicken livers and gizzards
  4. 1/2 cups - chopped green onion
  5. 1/2 cups - chopped onion
  6. 1/2 cups - chopped green pepper
  7. 1/2 cups - chopped celery
  8. 2 cloves - garlic
  9. 1 teaspoons - salt add more to taste
  10. 1 teaspoons - pepper add more to taste
  11. 1/8 teaspoons - cayenne pepper or add more to taste
  12. 4 cups - chicken broth made from bouillon cubes or use fat-free chicken broth
  13. 8 cups - cooked rice
  14. 1/2 cups - chopped green onion for garnish

Directions:

Brown beef in oil or Pam.

Add gizzards, liver, onions, green peppers, celery and garlic.

Season with salt, pepper and cayenne. Simmer for 10 minutes.

Add broth and bring to a boil. Lower to simmer and cook for 10 more minutes.

Add rice and stir; cover. Turn off burner and let sit.

Before serving, add green onions.
