Ingredients:
- 1 tablespoons - oil OR Pam cooking spray
- 1 pounds - lean ground beef
- 1 cups - boiled chopped chicken livers and gizzards
- 1/2 cups - chopped green onion
- 1/2 cups - chopped onion
- 1/2 cups - chopped green pepper
- 1/2 cups - chopped celery
- 2 cloves - garlic
- 1 teaspoons - salt add more to taste
- 1 teaspoons - pepper add more to taste
- 1/8 teaspoons - cayenne pepper or add more to taste
- 4 cups - chicken broth made from bouillon cubes or use fat-free chicken broth
- 8 cups - cooked rice
- 1/2 cups - chopped green onion for garnish
Directions:
Brown beef in oil or Pam.
Add gizzards, liver, onions, green peppers, celery and garlic.
Season with salt, pepper and cayenne. Simmer for 10 minutes.
Add broth and bring to a boil. Lower to simmer and cook for 10 more minutes.
Add rice and stir; cover. Turn off burner and let sit.
Before serving, add green onions.
