Rice Bowl with Sausage and Spinach

Ingredients:

  1. 6 ounces - hot turkey Italian sausage, casings removed OR sliced turkey sausage
  2. 1/8 teaspoons - crushed red pepper
  3. 5 cloves - garlic thinly sliced
  4. 1 - pouch (8.8 oz.) precooked brown rice OR 2 cups cooked rice
  5. 1 packages - (6-ounce) fresh baby spinach
  6. 1 tablespoons - olive oil OR coconut oil
  7. 1 ounces - Parmigiano-Reggiano cheese, shaved (about 1/4 cup)

Directions:

Heat or cook rice according to package directions.

In a large skillet over medium-high heat, swirl the oil to coat the pan. Add sausage and pepper, cooking 4 minutes or until sausage is browned, stirring to crumble.

Add garlic and cook for 30 seconds, stirring constantly. Add spinach; cook for 30 seconds or until spinach has just begun to wilt, stirring constantly.

Stir in the rice, and cook for 1 minute more until heated through. Sprinkle with cheese and enjoy.
