Restaurant-Style Queso Blanco

Ingredients:

  1. 1 tablespoons - cooking oil
  2. 1/4 cups - white onion diced
  3. 1 - large jalapeno seeds and stems removed, diced
  4. 12 ounces - white american cheese shredded
  5. 4 ounces - Monterey Jack cheese shredded
  6. 2/3 cups - cream, half and half or whole milk
  7. 1 - roma tomato seeds removed and diced

Directions:

Heat the oil in a sauté pan. Cook the onion and pepper until softened and reduce heat to medium-low. Add the shredded cheese and 1/4 cup of the cream. Stir until mostly melted. Add the tomatoes and additional cream a little at a time until you reach the desired consistency. Transfer to crock pot to keep warm.
