Variation: Try replacing with the following ingredients to produce a less sweet muffin: 2 1/4 cups boiling water, 3 cups all bran, 2 cups sugar, little or no salt, 4 cups white and 1 cup whole-wheat flour. Other ingredients remain the same.

- 2 cups - boiling water
- 2 cups - all-bran cereal
- 3 cups - white sugar
- 1 cups - shortening
- 4 - eggs
- 4 cups - buttermilk
- 3 tablespoons - baking soda
- 1 tablespoons - salt
- 5 cups - all-purpose flour
- 4 cups - bran flakes
- 2 cups - raisins
- 2 cups - boiling water
- 2 cups - all-bran cereal
- 3 cups - white sugar
- 1 cups - shortening
- 4 - eggs
- 4 cups - buttermilk
- 3 tablespoons - baking soda
- 1 tablespoons - salt
- 5 cups - all-purpose flour
- 4 cups - bran flakes
- 2 cups - raisins
Directions:
1. Pout boiling water over the all-bran; let stand.
2. Cream sugar, shortening and eggs. Add buttermilk, then the all-bran mixture.
3. Add dry ingredients, except for the bran flakes, and mix well. Fold in bran flakes and raisins.
4. Do not bake the first day.
5. Bake at 400°F for 15-20 minutes. Batter can be refrigerated for several weeks.
