Brief Description
A wonderful Holiday dessert (or any time) that melts in your mouth & reaps lots of compliments. So that it is not a diet-buster, simply substitute light or fat-free ingredients. I do not. I have made this the last two Christmas & guest loved it!

Notes:
Leaving the cake in the oven turned off for an extra 30 minutes is most important.

Ingredients:
- 1 1/2 cups - Chocolate Graham Cracker Crumbs
- 1/4 cups - Butter - melted
- 1 1/2 cups - Sugar plus 1 Tablespoon
- 4 packages - (8 ounces each)Cream Cheese (softened)
- 4 - Large Eggs
- 3 tablespoons - Unsweetened Cocoa
- 1 cups - Sour Cream
- 1/2 cups - Whole Buttermilk
- 2 teaspoons - Vanilla Extract
- 1 teaspoons - Distilled White Vinegar
- 2 - Red Food Coloring
- 1/2 cups - Butter, softened
- 1 teaspoons - Vanilla Extract
- 1 boxes - 16 oz. Powered Sugar
- - Garish: Chopped toasted Pecans
Directions:
Stir together Graham cracker crumbs, 1/4 C. Butter & 1 T. Sugar. Press mixture into bottom of a 9 inch springform pan.
Beat 3 (8oz) Cream Cheese & 1 1/2 C. Sugar at medium speed with electric mixer 2 minutes. Add eggs , cocoa, sour cream, buttermilk, 2 teaspoon vanilla, & red food coloring. Beat until fully combined. Pour batter into prepared crust.
Bake at 325 degrees for 10 minutes.
Reduce heat to 300 degrees & bake for 1 hour 15 minutes or until center is firm.
TURN OFF OVEN BUT LEAVE CHEESECAKE IN OVEN FOR 30 MINUTES.
Remove cheesecake from oven, run knife along outer edge of cheesecake & cool in pan on a wire rack 30 minutes. Cover & chill 8 hours.
Beat remaining 8 oz cream cheese & 1/2 C. butter until smooth. Gradually add 16 oz powdered sugar & 1 t. vanilla. Beat until smooth. Spread evenly over top of cheesecake. Garnish with pecans.& maybe a sprig of mint on each slice when serve.
