Red Quinoa and Mixed Berry Energy Bowl

Ingredients:

  1. 2 cups - red quinoa
  2. 1 cups - reduced sugar craisins
  3. 1 pints - blueberries
  4. 1 cups - walnuts chopped
  5. 5 sprigs - fresh mint leaves chopped
  6. 3 tablespoons - to 5 Tbsp. clove honey sweeten to taste

Directions:

Bring 2 cups uncooked red quinoa and 4 cups water to boil. Reduce heat and cover, continuing to stir.

When quinoa has absorbed all water and is light and fluffy, remove from heat and place in bowl.

Add rest of ingredients to bowl. Mix well.
