Ingredients:
- 1 1/2 pounds - small red potatoes diced
- 1/3 cups - butter or margarine
- - salt and pepper to taste
Directions:
Thoroughly wash the small red potatoes and then cut into large bite-size pieces. Place in a saucepan and cover with water; bring to a boil over high heat, then reduce heat to medium-high and allow to cook 10-15 minutes or until potatoes are just tender (not too long, or they will be too soft).
When potatoes are just tender enough, remove pan from heat, and drain water from potatoes. Return the potatoes to the pan, add butter and some salt and pepper. Stir slightly and cook over low heat for another 1-2 minutes until butter is melted.
Serve immediately.
