You can also grill the red pepper on the outdoor grill instead of cooking in the oven. OR you can purchase the jarred roasted red peppers. Make sure they are in water, not oil.

Ingredients:
- 1 - red pepper deseeded, sliced
- - Pam cooking spray
- 14 ounces - can chickpeas drained, rinsed
- 1/4 cups - water
- 2 cloves - garlic crushed
- 1 tablespoons - lemon juice
- - salt to taste
Directions:
Place the sliced red pepper on a baking tray sprayed with Pam spray and roast until softened.
Once the pepper is cooked and cooled, place all the ingredients in a food processor and blend, adding more water if necessary to create a smooth paste.
Add salt to taste and serve with chopped up carrot batons or any of your favorite Free vegetable sticks!
