Red Pepper Hummus Dip

Ingredients:

  1. 1 - red pepper deseeded, sliced
  2. - Pam cooking spray
  3. 14 ounces - can chickpeas drained, rinsed
  4. 1/4 cups - water
  5. 2 cloves - garlic crushed
  6. 1 tablespoons - lemon juice
  7. - salt to taste

Directions:

Place the sliced red pepper on a baking tray sprayed with Pam spray and roast until softened.

Once the pepper is cooked and cooled, place all the ingredients in a food processor and blend, adding more water if necessary to create a smooth paste.

Add salt to taste and serve with chopped up carrot batons or any of your favorite Free vegetable sticks!
