Ingredients:
- 2 - red peppers
- 1 ounces - goat cheese
- 2 cloves - minced garlic
- - red pepper flakes optional
- 1 packages - red lentil pasta
- 2 cups - broccoli
- 1/2 cups - chopped onion
Directions:
Preheat oven to 400 degrees F.
Cut the tops off each red pepper, cut the peppers in half lengthwise, and place skin side up on a baking sheet lined with foil. Place peppers in preheated oven until they are roasted and dark spots appear on the skin (about 20-25 minutes).
While the peppers are roasting, toss broccoli in olive oil and salt and place on a lined baking sheet. Roast the broccoli at 400 degrees for 30 minutes. Chop the onions, toss in olive oil, and roast the onions for about 15 minutes.
Once peppers are cool enough to handle, peel the skin off and place the peppers in a blender or food processor. Add the goat cheese, garlic, and red pepper flakes and blend until smooth.
Meanwhile, cook the pasta according to package instructions. Add all ingredients together in a bowl.
