If you want to add meat to this dish, add 1/2 pound smoked pork or ham bone to the beans before cooking, and then add 1/2 pound of smoked sausage before the 15-20 minute simmer. Also tastes great served over cubed, fried potatoes.

Ingredients:
- 1 1/8 cups - Red Beans
- 1/2 cups - Onion
- 2 cloves - Garlic
- 1 leaves - Bay Leaf
- 3/4 teaspoons - Salt
- 1/2 teaspoons - Fennel Seed
- 1/2 teaspoons - Red Pepper
- 2 cups - Brown Rice
Directions:
Combine beans and 3 cups of water. Bring to a boil, reduce heat, and simmer for 2 minutes. Cover and let stand for 1 hour (or, soak beans for 6-8 hours). Drain and rinse.
Stir in onion, garlic, bay leaf, salt, red pepper, and 3 cups fresh water. Boil, reduce heat, cover, and simmer for 2.5 hours or until beans are tender. Uncover and simmer for 15-20 minutes or until a thick gravy forms. Discard bay leaf and serve over rice.
