Red Beans

Ingredients:

  1. 1 pounds - Red beans
  2. 1 whole - Large onion Diced
  3. 1 cloves - Garlic Diced
  4. 1 tablespoons - Parsley flakes
  5. - Celery
  6. 1 pounds - Smoked sausage (or hot sausage)
  7. 2 tablespoons - N'awlins Cajun or Creole Spices

Directions:

1. Rinse beans, removing bad ones. Fill large pot with beans and water. Let boil for approximately 1 hour, adding water when needed. Add seasonings and spices.
2. Let beans cook until soft, adding sausage. Add butter, amount as needed. Cook on low heat until creamy.
3. Serve over rice.
