Red and White Cherry Salad

Ingredients:

  1. 1 packages - 6 oz. cherry flavored gelatin
  2. 2 cups - boiling water
  3. 2 cups - partially thawed frozen red tart cherries in juice
  4. 1 1/2 cups - cold water
  5. 1/3 cups - coarsely chopped almonds
  6. 1 containers - 8 oz. small-curd cottage cheese (1 cup)
  7. 1 packages - 3 oz. cream cheese softened
  8. - lettuce leaves for serving, optional

Directions:

Dissolve gelatin in boiling water. Stir in cherries, cold water and almonds; pour half of cherry mixture into 12-x-8-inch dish; refrigerate until set. Reserve remaining gelatin at room temperature.

Meanwhile, mix cottage cheese with cream cheese until smooth; spread evenly over set gelatin. Pour reserved gelatin over cheese mixture. Refrigerate until set.

To serve, cut into 12 servings. Place on individual lettuce-lined salad plates.
