Ray's Banana Cake

Ingredients:

  1. 2 1/2 cups - All-purpose flour
  2. 1 2/3 cups - Sugar
  3. 1 1/4 teaspoons - Baking powder
  4. 1 1/4 teaspoons - Baking soda
  5. 1 teaspoons - Salt
  6. 2/3 cups - Shortening
  7. 2/3 cups - Buttermilk
  8. 3 whole - Bananas mashed
  9. 2 whole - Eggs large

Directions:

Preheat oven to 350 degrees.
Mix all dry ingredients in a large bowl. In a medium bowl, mix together the shortening, 1/3 cup buttermilk and the bananas until fully incorporated. Then add to the dry ingredients and mix until smooth. Add the other 1/3 cup buttermilk and the eggs into the mixture and mix until blended. Add 1/4 cup chopped nuts if desired.

Pour mixture in a greased 13x9 pan and bake at 350 degrees for 35 minutes. Let cool and top with cream cheese frosting and nuts if desired.
