Raw, Dairy-Free Zucchini Alfredo

Ingredients:

  1. 4 - zucchini
  2. 1 cups - raw macadamia nuts
  3. 1 cloves - garlic
  4. 1 cups - extra-virgin olive oil
  5. 1/2 cups - spring or filtered water
  6. - juice of 1 lemon
  7. 2 teaspoons - wheat-free tamari
  8. 1/4 teaspoons - ground cayenne pepper
  9. - pinch of unrefined sea salt

Directions:

Peel the zucchini thinly with a vegetable peeler, so that they resemble fettuccine ribbons.

Blend together in a blender all of the remaining ingredients - the nuts, garlic, oil, water, lemon juice, tamari, cayenne and salt - and pour over the zucchini ribbons as your sauce.
