Ingredients:
- 4 quarts - fresh or frozen raspberries
- 1 cups - sugar
- 1 cups - organic rose petals available at kalustyans.com
- 1 cups - water
- 1/3 cups - lime juice
- - chilled soda water or sparkling water for serving
Directions:
Make raspberry puree by blending the raspberries in a blender or food processor on high until smooth. Strain to remove any seeds. (Should yield 1 quart of puree).
Combine 1/2 quart of puree with sugar, rose petals and water and bring to a simmer in a saucepan. Remove from heat and allow to infuse as mixture cools to room temperature.
Once cool, blend the mixture to combine and break down rose petals. Add the remaining 1/2 quart of puree to the mixture along with the lime juice. Chill until needed.
To serve, pour 1 part chilled puree into a Collins glass and top with 2 parts chilled soda water or sparkling water.
