Raspberry Cheesecake

Ingredients:

  1. 10 - graham crackers crushed
  2. 2 ounces - low-fat spread melted, Can't Believe it's Not Butter
  3. 1 1/4 cups - fat-free raspberry yogurt
  4. 7/8 cups - fat-free cottage cheese drained
  5. 1 packages - raspberry sugar free jello
  6. 1 teaspoons - gelatine
  7. 2/3 cups - boiling water
  8. 4 tablespoons - sweetener
  9. - fresh raspberries for garnish

Directions:

Mix together the crushed crackers and melted spread. Spoon into the base of a pie dish. Chill in the refrigerator for 30 minutes.

Mix the jello with the boiling water and stir in the gelatine. Leave to cool, then place in a food blender with the yogurt, cottage cheese and sweetener. Blend until smooth, then pour over the cracker base crust. Chill until set.

Arrange fresh raspberries on top before serving.
