Ingredients:

  1. 1 - Medium-Large cucumber, peeled Chopped into small-medium pieces
  2. 8 - Broccoli florettes Chopped into small-medium pieces
  3. 1 - Yellow bell pepper, roasted Skin removed
  4. 2/3 cups - Low fat greek yogurt Chilled
  5. 1 1/4 tablespoons - Cumin
  6. 1/2 tablespoons - Salt
  7. 1 tablespoons - Fresh lemon juice
  8. 1 - Medium-Large cucumber, peeled Chopped into small-medium pieces
  9. 8 - Broccoli florettes Chopped into small-medium pieces
  10. 1 - Yellow bell pepper, roasted Skin removed
  11. 2/3 cups - Low fat greek yogurt Chilled
  12. 1 1/4 tablespoons - Cumin
  13. 1/2 tablespoons - Salt
  14. 1 tablespoons - Fresh lemon juice

Directions:

Place prepared veggies into a medium bowl. Slowly add in greek yogurt, stirring with a large spoon and mix thoroughly.
Add in lemon juice, salt and cumin and stir gently.
Serve immediately.
