Ingredients:

  1. 2 tablespoons - cider vinegar
  2. 2 tablespoons - golden raisins
  3. 1/2 teaspoons - fresh ginger minced, peeled
  4. 1/2 teaspoons - curry powder
  5. 1/2 cups - apricot preserves
  6. 1 - scallion minced
  7. - salt

Directions:

In a small saucepan, combine the vinegar, raisins, ginger and curry powder; simmer over low heat until the vinegar has evaporated, about 2 minutes. Stir in the apricot preserves and scallion and season mixture with a little salt. Let cool.
Refrigerate for up to 1 week.
