Quiche Provencale

Ingredients:

  1. 1 - medium onion sliced
  2. 1/2 cups - chopped green pepper
  3. 1 tablespoons - oil
  4. 2 - medium tomatoes cut into wedges
  5. 1 cups - sliced zucchini
  6. 1 tablespoons - minced parsley
  7. 1 teaspoons - garlic salt
  8. 1/2 teaspoons - basil
  9. 1/4 teaspoons - pepepr
  10. 1 - unbaked pie shell (deep 10-inch)
  11. 6 - eggs beaten
  12. 1 1/4 cups - half and half

Directions:

Saute onion and green pepper in oil in large skillet until onion is transparent. Add tomatoes, zucchini, parsley and spices. Cook, stirring frequently, for 10 minutes. Drain well. Reserve.

Brush inside of pastry shell with a bit of beaten egg. Pierce shell with fork. Bake at 450 degrees F for 5 minutes. Remove and set aside.

Reduce oven heat to 350 degrees F.

Combine eggs with half and half; pour into pastry shell. Spoon drained vegetable mixture evenly over egg mixture.

Bake at 350 degrees F for 30 to 35 minutes.
