Ingredients:
- 1 1/2 pounds - chicken tenderloins or breasts boneless, skinless
- 1 tablespoons - fajita or chile pepper seasoning
- 1/2 teaspoons - salt
- 1/4 cups - olive oil
- 1 pounds - Velveeta
- 1 cans - Ro-Tel diced chiles & tomatoes
- 2 tablespoons - milk
Directions:
Combine olive oil, salt, and seasoning in small bowl and whisk together. Place chicken pieces in ziploc plastic bag and pour seasoning mixture over all. Mix until covered well, and let sit in fridge for 20-30 minutes.
Heat grill to medium-high heat and spray with non-stick spray. Remove chicken from bag, and cook on grill until cooked through, 10-15 minutes for tenderloins, 15-20 minutes for breasts.
While chicken is cooking, combine queso ingredients and cook over low heat in a saucepan, or heat in microwave-proof bowl in microwave and stir until melted and combined well.
Serve chicken topped with queso over a bed of brown rice, or alongside some black beans and rice.
