Ingredients:
- 1 tablespoons - cooking oil
- 1/4 cups - yellow onion diced
- 1 - large jalapeno or serrano pepper seeds and stem removed; diced
- 12 ounces - white American cheese shredded
- 1/2 cups - cream, half-and-half, or whole milk
- 1 - roma tomato seeded, diced
- 1 - small bunch cilantro chopped roughly
Directions:
Heat oil in a sauce pan. Cook onion and pepper in oil until they are softened and then reduce heat to medium-low.
Add the shredded cheese and 1/4 cup of the cream; continue to stir until mostly melted. Add the tomatoes, cilantro and additional cream a little at a time until the consistency is the way you like.
For serving, place in bowl or small crockpot (if serving to a crowd over time) and top with additional chopped tomato and cilantro for garnish. Serve with chips or tortillas.
