Pumpkin Spice Latte

  1. 1 cups - strong coffee
  2. 2/3 cups - evaporated milk
  3. 1/3 cups - pumpkin
  4. 2 teaspoons - granulated sugar or more, to taste
  5. 1/4 teaspoons - pumpkin pie spice OR ground cinnamon
  6. 1 teaspoons - pure vanilla extract
  7. - whipped cream for topping, optional


Mix all ingredients except the whipped cream together in a 2-cup microwave safe glass dish or small saucepan. Heat until very hot (for stovetop preparation, cook over medium-low heat, stirring occasionally).

Carefully pour into mugs. Top with whipped cream, if desired.

To make a foamy top to the latte, prepare ingredients as above (without whipped cream). Then carefully place the hot mixture into a blender container; cover with lid and hold down lid with folded towel or potholder while blending for 1 minute.
