Pumpkin Snickerdoodles

Ingredients:

  1. 2 3/4 cups - all purpose flour
  2. 2 teaspoons - cream of tartar
  3. 1 teaspoons - baking soda
  4. 1/2 teaspoons - salt
  5. 1/2 teaspoons - pumpkin pie spice
  6. 1 3/4 cups - sugar
  7. 2 sticks - softened butter
  8. 1 - egg
  9. 1 cups - pumpkin
  10. 2 tablespoons - cinnamon

Directions:

Preheat your oven to 400 degrees F.

In a large bowl, mix together flour, cream of tartar, baking soda, salt and pumpkin pie spice. Give it a little whisk to mix the dry ingredients together.

In your mixing bowl, cream together the butter and about 1 ½ cups of the sugar. (Save the rest of it to mix with the cinnamon later). Make sure you have mixed this until it’s all nice and fluffy.

Add your eggs and beat again. Next, throw in your pumpkin. After that is all combined and looking like an orange pumpkin(y) dream, start slowly adding the dry ingredients.

Take the cinnamon and the sugar and place in a shallow bowl and mix it together really good. Take about a tablespoon of your cookie dough, form into a ball and roll in your cinnamon sugar mix. Repeat with the rest of the dough.

Bake cookies for a total of 10-12 minutes (depending on your oven) but make sure to rotate the pan after 5 minutes. Cool them on wire racks.
