- 3 - eggs
- 1 cups - sugar
- 2/3 cups - pumpkin
- 1/2 teaspoons - cinnamon
- 1 teaspoons - baking soda
- 3/4 cups - flour
- - powdered sugar for sprinkling over
- - chopped nuts if desired
- 8 ounces - cream cheese softened
- 1 cups - 10x powdered sugar
- 1 teaspoons - vanilla
Combine eggs, sugar, pumpkin, cinnamon, baking soda and flour. Pour into greased jelly roll pan (15-x-10-x-1-inch pan).
Bake at 350 degrees F for 15 minutes.
Sprinkle with powdered sugar; put dish towel over top and roll up. Cool for 1 hour.
Mix filling ingredients together - cream cheese, powdered sugar and vanilla.
Open up cake roll. Sprinkle nuts over either before or after spreading filling over the cake.
Roll cake back up (without towel); refrigerate or freeze.
