Pumpkin Roll

Ingredients:

  1. 3 - eggs
  2. 1 cups - sugar
  3. 2/3 cups - pumpkin
  4. 1/2 teaspoons - cinnamon
  5. 1 teaspoons - baking soda
  6. 3/4 cups - flour
  7. - powdered sugar for sprinkling over
  8. - chopped nuts if desired
  9. 8 ounces - cream cheese softened
  10. 1 cups - 10x powdered sugar
  11. 1 teaspoons - vanilla

Directions:

Combine eggs, sugar, pumpkin, cinnamon, baking soda and flour. Pour into greased jelly roll pan (15-x-10-x-1-inch pan).

Bake at 350 degrees F for 15 minutes.

Sprinkle with powdered sugar; put dish towel over top and roll up. Cool for 1 hour.

Mix filling ingredients together - cream cheese, powdered sugar and vanilla.

Open up cake roll. Sprinkle nuts over either before or after spreading filling over the cake.

Roll cake back up (without towel); refrigerate or freeze.
