Ingredients:
- 1 cups - butter or margarine melted
- 1 cans - 29 oz. pure pumpkin
- 1 cans - condensed milk
- 4 - eggs beaten
- 2 teaspoons - vanilla
- 1 boxes - plus 1/4 cup sweet rice (Mochiko) flour
- 2 cups - sugar
- 2 teaspoons - baking powder
- 1/2 teaspoons - cinnamon
- 1/8 teaspoons - nutmeg optional
Directions:
Preheat oven to 350 degrees F.
Grease a 9-x-13-inch baking pan.
In a large bowl, mix together all pumpkin mixture ingredients. In a separate bowl, mix together mochiko mixture ingredients.
Gradually add flour mixture to wet ingredients and mix together.
Pour into greased baking pan; bake for 1 hour.
Let cool for several hours before slicing; use a regular butter knife or a plastic knife to cut mochi into serving size pieces.
