Pumpkin Doughnuts (or mini-muffins)

Ingredients:

  1. 1/2 cups - vegetable oil
  2. 3 whole - eggs
  3. 1 1/2 cups - sugar
  4. 1 1/2 cups - pumpkin puree 1 15oz. can
  5. 1 1/2 teaspoons - pumpkin pie spice
  6. 1 1/2 teaspoons - salt
  7. 1 1/2 teaspoons - baking powder
  8. 1 3/4 cups - flour
  9. 2 tablespoons - flour
  10. 1/2 cups - sugar
  11. 1 tablespoons - cinnamon

Directions:

Preheat oven to 350°. Prep doughnut pan or mini-muffin pan with non-stick spray. Mix together first 7 ingredients until well blended. Add flour and stir just until smooth. Fill doughnut pan openings or mini-muffin cups 3/4 full. Bake doughnuts for 15-18 minutes. Bake mini-muffins for 11 minutes or until toothpick inserted comes out clean. Mix cinnamon and sugar together while doughnuts/muffins are baking. After cooling for a few minutes, remove doughnuts from pan and roll in cinnamon-sugar (or shake gently in a bag).
