Notes:
This can be baked in cans and frozen. You can also use pureed squash, sweet potatoes or carrots instead of pumpkin, if desired. For muffins, pour into greased and floured muffin pan and bake at 350 degrees F for 12-16 minutes (depending on size of muffins).

Ingredients:
- 4 - eggs beaten
- 3 cups - sugar
- 2 cups - pumpkin puree
- 1 cups - salad oil
- 1 tablespoons - nutmeg
- 1 tablespoons - cinnamon
- 2 teaspoons - salt
- 2/3 cups - water
- 3 1/2 cups - whole wheat pastry flour
- 2 teaspoons - baking soda
Directions:
Mix together all above ingredients, except for water and flour. Add the water alternately with the flour. Pour into greased and floured pans and bake for 1 hour in a moderate oven (about 350 degrees F).
Makes 3 loaves in bread pans.
