Notes:
Make sure you use pumpkin puree in this recipe and not pumpkin pie filling. This recipe calls for using a 9x5-inch loaf pan. You can also use two 8x4-inch pans. If the bread seems to be getting too brown after 40-45 minutes of baking, Tent loosely with tin foil. Quick breads are done when an instant thermometer, inserted in the center, reads 195-205˚F.

Directions:
For the bread:
3 large eggs
1½ cups pumpkin puree
⅔ cup sunflower oil or any mild-flavored oil
1 cup sugar
½ cup light brown sugar packed
2 teaspoons vanilla
2 teaspoons pumpkin pie spice
2 teaspoons cinnamon
1 teaspoon baking soda
¾ teaspoon baking powder
¾ teaspoon salt
1½ cups all-purpose flour
For the topping:
3 tablespoons pepitas (pumpkin seeds)
1 teaspoon honey (or maple syrup)
½ teaspoon sunflower oil or any mild-flavored oil
